Baroota Creek Cabernet Sauvignon Is A Complex Grape That Will Not Be Rushed

The grapes that go into our bottles of Baroota Creek Cabernet Sauvignon demand extra time on the vine if we’re to be rewarded by the fruits of their labour.

This means our vineyard management needs to be carried out meticulously with precise canopy management to ensure our grapes get extended time hanging on the vine in the sun, safely!

When harvest time arrives, our Baroota Creek Cabernet Sauvignon grapes have absorbed plenty of sunlight, enabling them to ripen to perfection with an above average concentrated flavour profile at the higher end of the Baume scale.

The stars of our Cabernet Sauvignon are three of Australia’s most highly respected “clones”, handpicked by Emanuel after many trials, tastings, and rounds of scientific analysis; ISVFV6, O390-05, and French Clone 169.

Baroota Creek Cabernet Sauvignon – Grapes of distinction that demand privacy

Although you savour the flavours of each clone that’s blended in each bottle we produce, the wine does not start out this way.

We harvest, process, and mature each Baroota Creek Cabernet Sauvignon clone independently of each other.

This allows us to closely analyse and monitor each clone for its development during the maturation process.

Bench testing, blending, and fine tuning the parcels further enables the wine profile to evolve and develop.

In keeping with our respect for these grapes, not only do we allow them extra time in the vineyard, we extend that same courtesy in the cellar.

Our Baroota Creek Cabernet Sauvignon spends extra time in barrel maturation, between 18 months to two years. It’s this extra gift of time that enables our Cabernet Sauvignon to develop its complex amalgam of fruits and spices, while integrating with the various oak profiles we use.

The result is a complex, balanced wine of distinction with great structure

When you open your bottle of Baroota Creek Cabernet Sauvignon, you’ll taste an enticing blend of rich and ripe blackberries, plums, and black cherries.

After a a swirl of the glass, you’ll experience an array of aromatics to delight the senses, including cabernet florals and blackcurrants that are reminiscent of a Christmas pudding.
