Shiraz

The Baroota Creek Shiraz is produced exclusively from grapes grown on Flinders Run’s own vineyard sites.

But if you take a closer look, you’ll discover our Shiraz is not just one “clone” of Shiraz, but rather a blend of them. Our dominant clone is the provis Shiraz with additional plantings of the following Shiraz clones R6WV28, Kalimna 3C, Barossa 1654 and PT15. 

This is key to Baroota Creek Shiraz’s impressive pedigree. 

The combination of these hand select clones delivers a big, rich, bold wine, with an almost impenetrable depth of colour; think ink!

Flinders Run’s Baroota Creek Shiraz is a powerful, opulent, full-bodied wine style, displaying complex layers of lush fruits and spices. Our use of new and high-quality seasoned oak barrels complements the fruit and gives this great wine balance and a long pure finish.

Like landscape artist, Hans Heysen, who achieved worldwide fame for his paintings of the Flinders Ranges, our vineyards and the various parcels of grape clones we harvest, provides us with a palette from which we can blend the flavours and qualities we need to achieve premium wine masterpieces, with great consistency from one harvest to the next.

Cabernet Sauvignon

The Baroota Creek Cabernet Sauvignon is a complex wine that we do not rush. With our meticulous approach to vineyard management, enables our fruit to enjoy a longer time hanging on the vine. This means our grapes can absorb plenty of sunlight, ripening to perfection while achieving a far more concentrated flavour profile at the higher end of the Baume scale. 

The stars of our Cabernet Sauvignon are three of Australia’s most highly respected Cabernet Sauvignon clones, handpicked by Emanuel after many trials, tastings, and rounds of scientific analysis; ISVFV6, O390-05, and French Clone 169.

Although you savour the flavours of each clone thats blended in each bottle we produce, infact we harvest, process, and mature each clone independently of each other. This allows us to analyse and monitor their development closely during the maturation process. Bench testing, blending, and fine tuning the parcels further enables the wine profile to evolve and develop.

We don’t rush our grapes in the vineyard and nor do we rush them in our cellar, allowing between 18 and 24 months of barrel maturation for our Cabernet Sauvignon to develop its complex amalgam of fruits and spices, while integrating with the various oak profiles we use.

The result is a balanced wine with great structure. You’ll taste an enticing blend of rich and ripe blackberries, plums, and black cherries, while a swirl of the glass will reveal an array of aromatics to delight the senses, including cabernet florals and blackcurrants that are reminiscent of a Christmas pudding. Finally, thanks to the judicious use of oak, the rich experience on your palate will carry through to a long, pure finish.

Cabernet Sauvignon/Shiraz

If you’re familiar with the Aesop fable, The Tortoise and The Hare, you’ll understand the challenge of making our Cabernet Sauvignon Shiraz blend. The Shiraz is an early ripener, demanding to be harvested about 10 to 14 days ahead of the Cabernet Sauvignon. However, both are worth waiting for, developing in their own time to the gold medal level of 15.0 Baume at harvest.

The “action” for this wine, takes place on two individual blocks in our Southern Flinders Ranges Gribbles Road vineyard, where both varietals grow separately, but under identical conditions. Once back in the winery, each varietal continues its own journey, maturing independently of the other. However, once the desired oak influence is achieved, our winemaker’s task is to bring these two, proud champions together, seamlessly balanced into the perfect marriage of two classic Australian varieties.

Our Cabernet Sauvignon Shiraz showcases the uniqueness of this region’s terroir, clearly demonstrating the natural ability of Southern Flinders Ranges’ fertile basin, to nurture and produce some very serious wines. We aim for a 60% Cabernet Sauvignon and 40% Shiraz blend, although Mother Nature’s influence on each vintage dictates and determines the final ratios we apply in the finished wine. The final wine is structurally bold, showcasing the cherished flavours both varietals are known for. Your glass will be stained with cherry black and deep purple hues, while a gentle swirl will reveal the enticing aromatics, including spicy oak, along with red and black berries.

This is a harmonious, mouth-filling blend that is wonderfully balanced, with a finish more profound than Aesop’s! Long after you drain your glass, this wine will linger with you, encouraging you to savour every step of its race from the vineyard to your glass.

Merlot

Our general rule is that great wines are made in the vineyard. But when it comes to Merlot, we can pinpoint the make-or-break factor for our wine at pruning time.

Merlot is more sensitive to sunlight, fruit load, and soil moisture, than most varieties, so during pruning season we make sure that spurs are evenly spaced. Spurs are small shoots on the vine that contain two buds, from which new growth develops.

Our vineyard management program makes sure these vines have enough leaves to create a canopy for protecting the grapes through the season, while leaving a quantity of spurs that won’t burden plants with too much fruit production.

A further element we pay close attention to is irrigation because Merlot is particularly sensitive to “wet feet”. This means constant monitoring of our irrigation system, adjusting it as needed. The Merlot grapes we use in the Baroota Creek series, are neighbours to our Shiraz and Cabernet Sauvignon varieties, located on the western slopes of the Southern Flinders Ranges.

As Merlot grapes ripen, close attention is paid to the acid levels (which are falling) and the sugar levels (which are rising), to make sure we get harvest them when the balance is perfect. The finished wine is soft, fleshy, and luscious, and very much fruit forward in style. Our Merlot features the flavours of ripe blackberries, cherries, and plums, elegantly framed by soft, silky tannins. You will also detect a slight earthiness in this wine’s long, smooth finish, thank to extra ageing in high quality, seasoned French oak barrels.
